Ingredients
- 6 medium gold potatoes cubed
- 4 cups fresh or frozen corn
- 1 medium onion chopped
- 1 bell pepper chopped
- 1 jalapeno diced seeds removed for less heat
- 5 cloves garlic minced
- 3 cups vegetable or chicken broth
- 1 can full fat coconut milk can use light
- 1 tsp smoked paprika
- 1 tbsp liquid aminos or soy sauce
- salt & pepper to taste
- 2 tbsp nutritional yeast optional

- Prep Your Veggies: Wash, peel and dice the potatoes, chop the onions, bell pepper and mince the garlic and jalapeno. Remove the ribs from the jalapenos if you're making this for your whole family to cut down on heat. You'll want to have everything ready to simply toss into the slow cooker.
- Add Everything to the Slow Cooker: Place the potatoes, corn, onion, green pepper, jalapeno, garlic, smoked paprika, broth, liquid aminos and pepper into the slow cooker. Stir everything well to combine.
- Cook on Low: Set your slow cooker to low and let it cook for 6-7 hours, or until the potatoes are tender. If you're in a hurry, you can cook on high for 3-4 hours, but slow cooking helps the flavors tie to combine beautifully.
